2014 Harvest and Preserving Notes

Each year, I am getting a little better at tracking what we harvest and then preserve. When we look at the freezer and the pantry in the garage, our hearts are filled with gratitude that we have enough bounty to eat throughout the year and to share with our friends and family.

We only planted a couple of basil plants last season to enjoy fresh since we knew we still had containers of yummy basil pesto from the year before! Here are the tallies (not including what we ate fresh from the garden):

For the freezer: two gallon-size bags of blueberries, one gallon-size bag of shelling peas, 14 gallon-size bags of peach cobbler filling, and 22 3-cup portions of shredded zucchini. WAY too many peach cobblers and zucchini loafs to be made! I need to get more creative this year!

For the pantry: over 300 pounds of peaches, apples, pears, tomatoes, bell peppers, jalapeños, nectarines and figs were canned and dehydrated for a total of 73 4-oz jelly jars, 127 half-pint jars, 86 pint jars and 16 quart jars full of goodness.
