Roasted Beets and Onions

This week I harvested the last of the beets and the onions from the raised beds. Your mom shared her easy roasting recipe for beets:

Scrub and peel beets, rub with a little olive oil, sprinkle with a bit of sea salt and pepper to taste, roast @ 350 for 1/2 an hour to an hour (depending on size). I added a few of the newly harvested onions. Wow! I enjoyed a lovely, tasty, FRESH lunch today with a bit left over. Nothing better than creating from dirt to table ~ love it!
